What is a Michelin-starred restaurant in Córdoba?
This guide, originally known for its red cover, was the idea of the Michelin tire company to encourage drivers to visit the best restaurants in France.
Its first edition was published in August 1900, featuring details on how to change a tire, where to refuel, maps, and, of course, the best places to eat and stay. Completely free until 1920, three years later it recommended a restaurant that was not also a hotel for the first time.
In 1926, the Michelin star distinction was introduced, initially as a single star, which expanded to two or three stars in 1931. This is how the foundation of what is now considered the world’s most prestigious restaurant guide was established.
Michelin Star Rating
The Michelin guide provides a brief explanatory text and many pictograms that clearly summarize the level and category of the recommended restaurant, but what do these symbols mean?
The Michelin stars reward originality, creativity, flavor, perfect cooking, product quality, and value for money. One Michelin star indicates a refined kitchen, two Michelin stars tell the user that the restaurant offers exceptional cuisine, while three Michelin stars, the highest accolade, present a completely unique culinary experience.
But the symbols have evolved over time, going beyond the familiar stars. One such symbol is the Bib Gourmand, which recognizes high-quality cuisine at an affordable price, considering unique and top-quality characteristics. This symbol comes from Bibendum, the Michelin Man.
The Michelin Plate is another symbol we might find, which indicates that although the restaurant does not have a Michelin star or Bib Gourmand, its quality is worthy of appearing in the guide. This clarifies that if it’s in the guide, it’s of high quality.
Finally, we find the Michelin Green Star, which made its first appearance in 2020. This annual distinction is awarded to establishments committed to sustainable gastronomy, ensuring that this does not affect the quality and great flavor of their dishes.

There’s a lot of Andalucía in his creations, a lot of love in his work, and an effort to offer each customer a unique experience, both culinary and personal. The restaurant offers several tasting menus, each of which takes your palate on a completely different journey.
